Professor Eric Wood and research scholar Justin Sheffield posed this difficult question to 14 freshmen taking the Global Environmental Change: Science, Technology and Policy seminar, "Why do you think we're seeing a global transition to a meat-based diet?"
The seminar, which is being offered for the first time this fall, addresses the issue of climate and sustainability through the lens of many disciplines. Each week a different topic is introduced and discussed. The topics range from the impact of modern technology on global agriculture, the importance of food security, the causes of recent spikes in food prices, to the pros and cons of U.S. foreign aid policies.
